Sandwiches For Lunch Again?

šŸ„Ŗ Stuck in a rut eating the same old sandwiches at work everyday? šŸ„Ŗ


Take 10 minutes out of your daily routine to rustle up a nutrient packed meal, which will fill you up at lunchtime and power you through the afternoon.


Hereā€™s a plant based recipe to get you started with, which literally took me 5 minutes to prepare.


Ingredients

3 tomatoes, roughly chopped

1/2 red onion, roughly chopped

2 handfuls of green leaves (I used watercress and rocket), roughly chopped

1/4 cucumber, roughly chopped

1/2 handful of flat leaf parsley, roughly chopped

1 garlic clove, finely chopped

2 tins cannelloni beans (which are already pre-cooked), rinsed until the bubbles disappear

1 tbsp virgin olive oil

1 tbsp apple cider vinegar

Dash of Tabasco

Sea salt & pepper to season

Optional: I added anchovies as a side for an omega 3 boost
